Idaho Potato Chowder

- 3 slices bacon, diced
- 8 green onions, sliced
- 2 garlic cloves, minced
- 3 cups potatoes, diced
- 2 chicken bouillon cubes
- 2 cups water
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cups milk
- 3 tablespoons flour
- 1 tablespoon parsley
directions
- Cook bacon, reserve drippings.
- Saute green onions and garlic in drippings until tender.
- Add the potatoes, bullion, water, salt and pepper.
- Bring to a boil.
- Simmer, covered for 20 minutes, or until potatoes are tender.
- Whisk together milk, flour and parsley.
- Stir into potato mixture.
- Cook until thick.
- Add bacon and serve.
