- 946.36 ml chicken broth
- 473.18 ml sliced shiitake mushrooms
- 255.14 g firm tofu, diced (about 1 cup)
- 78.78 ml sliced bamboo shoot
- 29.58 ml rice vinegar
- 14.79 ml soy sauce
- 29.58 ml Asian chili sauce (or to taste) or 29.58 ml chili paste (or to taste)
- 14.79 ml cornstarch, dissolved in 2 Tbsp water
- 2 medium scallions, sliced
directions
- In a soup pot, stir together broth, mushrooms, tofu, bamboo shoots, vinegar, soy sauce and hot sauce/chili paste.
- Bring to a simmer and cook 5 minute.
- Stir in dissolved cornstarch and simmer for 2 more minutes.
- Serve sprinkled with sliced scallion.
- Yields about 1 cup per serving.
