A great spread! From Chef Tal Ronnen's The Conscious Cook cookboook.
- 1 tablespoon prepared horseradish
- 1 cup vegan mayonnaise
- 1 teaspoon light agave nectar
- 1 lemon, juice of
- 1⁄2 teaspoon sea salt
- 1 teaspoon fresh ground black pepper
- Put all of the ingredients in a bowl and whisk well to combine. Store covered in the fridge for up to 2 weeks. Enjoy!
I thought this would turn out as a sandwich spread but after mixing all the ingredients, it was more of a sauce/dressing consistency. Maybe the lemon I used was to big.I was going to have it on a sandwich with left over roast beef, but I had it over a salad and threw the roast beef in there as well. Turned out delicious!!!
