- 2 cups spiral macaroni, uncooked
- 2 cups ham, cooked and cubed
- 1 cup celery, sliced
- 1⁄3 cup red onion, diced
- 3⁄4 cup mayonnaise or 3/4 cup salad dressing
- 1⁄4 cup lime juice
- 2 tablespoons honey
- 1 tablespoon fresh cilantro, chopped
- 1 medium honeydew melon, cut into 6 wedges, seeded, rind removed
directions
- Cook macaroni as directed on pkg. Drain; rinse with cold water.
- In large bowl, combine macaroni, ham, celery, and onion. In small bowl, combine mayonnaise, lime juice, honey and cilantro; blend well. Spoon over macaroni-ham mixture; toss gently. Cover; refrigerate 45 minutes or until thoroughly chilled. Serve over melon wedges; garnish with fresh cilantro and lime peel, if desired.

This salad was wonderful! Instead of serving the ham salad in the honeydew wedges, I diced 1/2 of the melon and mixed the pieces into the salad. This made the salad a bit easier to eat and to transport. The honey and the lime juice made for a very tasty combination of sweet and tart, and was a perfect dressing for the ham and pasta when it was mixed into the mayonnaise and cilantro. This salad was one that I thought to myself "Duh! Why didn't I think of that?" Thanks so much for posting CJAY!
