- 1 1⁄2 tablespoons lime juice
- 1 poblano pepper, seeded and diced
- 1⁄2 honeydew melon, peeled, seeded and diced
- 2 small cucumbers, diced
- 1⁄4 cup of fresh mint, chopped
- 1⁄4 teaspoon smoked sea salt
- In a large bowl, toss together lime juice and poblano. Add honeydew, cucumber and mint, and toss again. Sprinkle with smoked salt and serve.
