- 236.59 ml whole wheat flour
- 118.29 ml all-purpose flour
- 4.92 ml baking soda
- 2.46-4.92 ml ground nutmeg
- 1.23 ml salt
- 2 eggs, lightly beaten
- 236.59 ml mashed ripe banana (1 or 2 medium)
- 118.29 ml unsweetened applesauce
- 88.74 ml honey
directions
- In a large bowl combine the first 5 ingredients.
- Combine eggs, banana, applesauce and honey.
- Stir into dry ingredients just until moistened.
- Coat muffin cups with nonstick cooking spray.
- Fill two-thirds full with batter.
- Bake at 375° for 15-18 minutes or until toothpick comes out clean.
- Cool 5 minutes before removing from pans to wire rack.

Since I was diagnosed with diabetes, I have been unable to find a banana muffin that even came close to the high fat, high calorie muffins that I love. These muffins came really close! I used the whole tsp of nutmeg, and might next time only use 1/2, or leave it out entirely. All in all, a delicious and easy recipe. I liked them even better for breakfast the second day. Thanks for such a great recipe!

I love this basic recipe because it literally makes you itch to modify it and have fun with the ingredients. Very easy to make, and even easier to eat! The only substitutions I made the first time was half brown sugar and half granulated for the honey. I wanted that more upfront sweet taste from the sugar. I also had to bake the muffins for twice the baking time about 30 - 35 minutes in total. I think that may have been due to having more banana than the one cup in the recipe because I just mashed the bananas without measuring. My only grievance is that while the banana flavor was quite strong right after baking, by the next day it had disapated. They were still tasty but tasted a little bland.

I live in PA and work in the billing dept. for a local health center. For fun I hang out with friends, and of course cook! I love to have fun cooking but am very inexperianced cook.
