I found this recipe in my 2008 Taste of Home Annual Recipes, and it's a keeper. I skipped the ham but with the rice and beans and hominy and sausage and cheese I didn't feel anything was missing. I used fresh jalapenos and put cheese on top of the hominy and topped with even more cheese when I baked and added more cheese when it finished baking. I liked how fast it came together, and it was slightly cheesier than it would have been.
