- Peel all garlic cloves. Chop very finely. Have salt measured, and add some to make a paste, or, do in the food processor.
- Transfer to a small, covered container and keep a long time. If desired, at any time, leave open on counter for 1-2 days, allowing garlic, to dehydrate slightly, which will intensify and brighten the flavor a little.
