Holiday Cheer Eggnog

What a delightful Holiday drink - and you can take your choice of flavoring!!

  1. In a heavy 2 quart saucepan whisk together eggs, honey and salt. Gradually add 2 cups milk. Cook and stir over medium-low heat for 12-15 minutes. or until mixture coats the back of a spoon (do not boil!).
  2. Pour into a large heatproof bowl; stir in remaining milk and vanilla. Place bowl over ice-water bath, stirring frequently until mixture is cooled about 15 minutes. Cover and refrigerate for at least 3 hours.
  3. When reado to serve, whisk in your favorite flavoring.
  5. Stir in 1/2 -1 cup of rum or brandy or a combination of both.
  6. Stir in 1 1/2 teaspoons instnt coffee granules, dissolved in 1 tablespoons hot water or 1-2 teaspoons rum extract.
  7. Stir in 2 cups softened vanilla ice cream and blend with whisk or mixer.
  8. Replace half milk with Amaretto, French Vanilla or Irish Creme flavored dairy blend for coffee.
  9. TIP: Eggnog may be covered and stored in the refrigerator for several days. To serve, keep bowl of eggnog on ice and serve within 2 hours. For creamy eggnog, add 2 cups whipped cream.
