High Country Apple Cake

"This is the best apple cake you wil EVER EVER EVER find. It is so good, and really easy to make too. Pretty cool huh? Wait till you taste it. THe first time my sister made it i was like um.... whoa... thats good stuff. Ever since weve made this cake at least five times a month. HEHE"

• Yields: 24 peices
• Serves: 12

ingredients

• 3⁄4 cup sugar
• 3 eggs
• 1 cup oil
• 2 cups flour
• 1 teaspoon salt
• 1 teaspoon vanilla
• 1 teaspoon baking powder
• 1 tablespoon cinnamon
• 2 cups unpeeled cubed apples
• 1⁄2 cup pecans, chopped (optional)

directions

1. Measure all ingredients, except apples and pecans, into large bowl.
2. Beat together thoroughly with spoon.
3. Fold in apples and pecans.
4. Bake in greased and floured 9" x 13" pan at 350 degrees for 45 to 50 minutes.
5. Cool and remove from pan.
