Quick & easy pasta dish. Excellent served with garlic bread and a salad.
- 9.85 ml olive oil
- 2 garlic cloves, crushed
- 14.79 ml fresh basil leaf, chopped
- 29.58 ml fresh parsley, chopped
- white pepper
- 453.59 g boneless skinless chicken breast, cut into 1 " pieces
- 226.79 g linguine or 226.79 g spaghetti or 226.79 g macaroni noodles, cooked & drained
- 29.58 ml parmesan cheese, grated
- Mix oil with basil, parsley, and pepper in a small bowl.
- Heat seasoned oil in a large nonstick skillet over med-high heat.
- Add chicken; saute until chicken is done (about 5 minutes).
- Pour over cooked pasta and sprinkle with cheese; toss to mix.
I really liked it . We did add more oil, chicken broth to moisten it. We also added diced tomatoes and peppers. It was still a little dry but delicious.
This recipe was a good foundation... There needs to be more oil, for one thing, and I seasoned the oil to taste, adding some oregano. When it was finished, it was much too dry, so I mixed up a white wine vinaigrette with more basil and oregano, tossed along with the parmesan... it was delicious!
This was fast and easy. Very nice dinner. I added a little lemon zest just before serving. It was a nice addition.
