Heavenly Caramel Dip for Apple Slices

"Perfect for dipping in green apple slices, browning can be prevented by using a little lemon juice on the apple slices."

ingredients

• 18 caramels, unwrapped
• 60 ml water
• 224 g cream cheese
• 110 g brown sugar (can be lessened for less sweetness)
• 1 drop vanilla essence

directions

1. In a medium saucepan over medium-low heat, or in the microwave, melt caramels with water, stirring frequently, until all lumps dissolved. Remove from heat.
2. In a medium bowl, cream together cream cheese and sugar. Fold in caramel mixture.
3. Can serve straight away or keep in the refrigerator for up to two days.

Made this caramel dip today and it was sooo easy and sooo delicious. It is a little too sweet for me, so I have to eat it sparingly. Can't wait to make it for the grandkids -- they will love it. Nice to be able to make this dipping sauce yourself vs. purchasing store-bought sauce. I purchased a bag of organic apples today just to eat along with this delicious dip.
