Heavenly Caramel Dip for Apple Slices

- 18 caramels, unwrapped
- 60 ml water
- 224 g cream cheese
- 110 g brown sugar (can be lessened for less sweetness)
- 1 drop vanilla essence
directions
- In a medium saucepan over medium-low heat, or in the microwave, melt caramels with water, stirring frequently, until all lumps dissolved. Remove from heat.
- In a medium bowl, cream together cream cheese and sugar. Fold in caramel mixture.
- Can serve straight away or keep in the refrigerator for up to two days.

Made this caramel dip today and it was sooo easy and sooo delicious. It is a little too sweet for me, so I have to eat it sparingly. Can't wait to make it for the grandkids -- they will love it. Nice to be able to make this dipping sauce yourself vs. purchasing store-bought sauce. I purchased a bag of organic apples today just to eat along with this delicious dip. Made for Spring PAC, May 2014.
