- 59.14 ml cornmeal
- 236.59 ml water
- 1.23 ml chopped garlic
- 1.23 ml salt
- 236.59 236.59 ml spinach, wilted or 236.59 ml zucchini, cut into coins,steamed (or a combination of all of the above veggies)
- 7.39 ml grated parmesan cheese
- 0.61 ml thyme
- 0.61 ml oregano
- 0.61 ml dried basil
- 0.61-1.23 ml dried parsley flakes
- 0.61 ml paprika
- 0.61 ml pepper

- Preheat oven to 350 degrees Fahrenheit (177 degrees Celcius).
- Spray a small ovenproof dish with cooking spray.
- Combine the polenta, water, garlic, and salt in the dish; ensure that there are no lumps.
- Bake uncovered for about 60 minutes.
- In the meantime, steam the desired vegetables.
- When polenta is done, top with 1 cup of vegetables.
- Sprinkle with parmesan cheese, season with herbs and spices, and serve hot.
