Just something I threw together to start eating healthier. It is delicious!!


  1. Heat olive oil in large skillet.
  2. Add peppers, red onion and mushrooms.
  3. Sautee until crisp tender.
  4. Add spinach leaves and let them wilt down slightly.
  5. Beat eggs and add them to the skillet.
  6. Season with creole seasoning.
  7. Cook until the eggs are cooked.
