ingredients
- 5 medium apples, peeled, cored and shredded (about 4 Cups)
- 118.29 ml honey
- 177.44 ml prune juice
- 354.88 ml light brown sugar
- 2.46 ml ground allspice
- 4.92 ml ground cinnamon
- 7.39 ml baking soda
- 2.46 ml baking powder
- 2.46 ml salt
- 473.18 ml oatmeal
- 946.36 ml flour
- 473.18 ml raisins
directions
- Combine all ingredients.
- Drop by rounded teaspoons on lightly greased cookie sheet.
- Bake 12 minutes in 350 degree oven.

These were pretty good cookies. I like the fact that they use juice instead of oil and the honey gave them a nice rich flavor. However, I do think the batter was amazing and I could have sat there with a spoon all night eating it. But once they were cooked they were a little dry and stuck to the pan. But all in all, not bad for being healthy.

These are great! Very easy to make and healthy (no eggs or oil) I substituted applesauce 1:1 instead of prune juice (didnt have any) and it worked out well. A little dry before you add the apples in so you may need 1Tbsp of applesauce for more wet. I sprinkled a little more cinnamon, adding pumpkin spice and a dash of cloves as well. You can pretty much use any complimentary spice and it will make this very tasty!
