- 4 cups flour
- 2 tablespoons baking powder
- 1⁄2 cup sugar
- 1 teaspoon salt
- 4 eggs, beaten
- 1 1⁄2 cups milk
- 1⁄2 cup butter, melted
- 1 1⁄2 cups drained crushed pineapple
directions
- Sift dry ingredients.
- Add eggs, milk, and butter.
- Stir until smooth.
- Add pineapple, mixing well.
- Spoon into greased 3-inch muffin pans, filling 3/4 full.
- Bake at 425 degrees for 20 to 25 minutes.

I tried this recipe, following it to a "T" We really liked them, but the muffins were more on the bland side (I bet we're just too used to flavorful food!). First batch came out ok, second batch added some honey on top, and were a little better. 3rd batch, added some brown sugar on top, and were by far, the best!! I plan on making them again, and adding more sugar to the batter. Thanks for this good recipe!!
