- 1 pork heart
- 1 teaspoon salt
- hot water, to cover

Sauce
- 2 stalks celery, finely chopped
- 2 large onions, finely chopped
- 2 tablespoons vegetable oil
- 4 tablespoons brown sugar
- 1⁄4 cup apple cider vinegar
- 1⁄2 cup water
- 1⁄2 cup ketchup
directions
- Put the heart in a pot.
- Cover with hot water.
- Add salt.
- Bring to a boil.
- Cook on medium heat until done, about 1 1/2 hours.
- You may need to skim the water during cooking.
- Drain.
- Cut heart into slices.
- Sauce: Saute onion and celery in oil until soft.
- Combine sugar, vinegar, water, and ketchup.
- Add to onion mixture.
- Bring to a boil.
- Reduce heat and simmer, covered, 45 minutes.
- Add sliced heart.
- Heat 10 minutes.

I didn't use the celery but everything else was "by the recipe". I actually didn't eat this until day 3 but poured the sauce over the sliced heart and put it in the fridge. On day 3 this was AWESOME! Hubby doesn't like heart and I'm trying to save some for him to taste because I really think he'll like this one. Don't know that the heart will last that long though :). Thanks for a keeper!
