Ham and Cheese Hash Browns

This recipe came from the Cooking Light magazine. It's very easy and fast. A great way to use left over ham.

  1. Combine potatoes and chicken broth in a 1-quart microwave-safe casserole.
  2. Cover with lid, and microwave at HIGH 12 minutes, stirring after 6 minutes.
  3. Uncover dish.
  4. Stir in green onions, 1/8 teaspoon black pepper, and ham.
  5. Sprinkle with cheese.
  6. Microwave on HIGH 1 minute.

What a great way to use up leftover ham! Yum!

This was delicious! I love hashbrowns for breakfast so I ended up having this for breakfast over the weekend. It's very filling and stayed with me for a while, so I wasn't as hungry at lunch. Thanks for the recipe!
