Guacamole Stuffed Deviled Eggs

A great healthy way to eat stuffed eggs. Protein, fiber and no cholesterol. Here's something to make with those Easter eggs that you colored.


  1. Mix avocado with salsa.
  2. Place a scoop into each half.
  3. Top with a cilantro or parsley and serve.

Wow, was this good. Guacamole and eggs, what a novel idea. I used a hot n spicy, thick and tangy homemade tomato salsa with fresh cilantro and halapeno peppers. What a lovely treat for lunch, thanks so much for sharing Rita.
