- 8 chicken drumsticks
- 14.79 ml olive oil
- 4.92 ml lemon juice
- 4.92 ml fresh gingerroot, zested
- 1 garlic clove, minced

Salsa
- 1 grapefruit, halved
- 1 avocado, chopped
- 2.46 ml red pepper flakes (to taste)
- 1 small tomatoes, chopped
- 1 small onion, chopped
- 1 yellow bell pepper, chopped
- 29.58 ml cilantro, chopped
- 1 lime, juice of
directions
- Combine olive oil, lemon juice, ginger, and garlic in a large sealable plastic bag. Add chicken drumsticks and toss to coat. Allow to marinate for 20-30 minutes in refrigerator.
- Cook chicken on grill over medium heat until cooked through, about 20 minutes or until meat thermometer reads 165°F Turn once halfway through.
- While chicken is cooking, prepare the salsa. Gently remove the halved grapefruit pieces from the skin and place in a medium bowl. Add avocado, red pepper flakes, tomato, onion, yellow bell pepper, cilantro, and lime juice, and toss gently to combine.
- Serve chicken with salsa.

Such a great grilled chicken recipe. The chicken was easy and had good flavor. The best part was the salsa. I loved the combination of ingredients! Delicious!! I I used 1/4 t. red pepper flakes and it seemed to be just enough for our liking. I will keep the salsa recipe in mind to make on its own. Yummy!

I used 4 wings and 4 legs to make this. The marinated chicken was fine but the salsa was the star of the show! My son ate nearly half of it with tortilla chips while the chicken was grilling. I loved the grapefruit and avocado in it. I'm definitely going to make this great salsa often. Thanks for sharing a true keeper. Good luck in the contest.
