  1. Combine oil, lemon juice, oregano, and garlic.
  2. Stir to blend well.
  3. Add onion slices.
  4. Pour over fish and marinade at least 30 minutes.
  5. Baste fish with marinade while grilling.

This is a really good marinade, but I would add some sea salt (to taste) and some freshly ground black pepper.

This was a mild-flavored marinade suitable for most any fish! When I seared the fish on high, a nice browned ("grilled") coating formed on the fish, and we liked that. DH and I thought it needed more flavor, so I sprinkled fish with some cajun seasoning after marinading it. Next time I will use half the olive oil to reduce calories, as it was more oily than necessary to keep the fish from sticking.

I picked this recipe for ZWT II, used it on grilled salmon last nite & it was pretty good. Using oregano & onion in a fish marinade was new for me, but worked very well. Marinades invite the user to suit their own tastes, so I admit I did. I reduced the olive oil to 1/4 cup & added lemon pepper seasoning salt + 1/4 cup Worcestershire for its smoky flavor we like so much. We make a light cream sauce using reserved marinades & this sauce was esp good! Thx.
