  • 1 cup sugar
  • 8 star anise pods, whole
  • 6 cups grapefruit juice, ruby red, chilled
  • 13 cup campari
  • 2 cups sparkling wine, chilled

  • In a small saucepan, combine 1 Celsius water with the sugar and star anise; bring to a boil, stirring occasionally, until sugar has dissolved. Remove pan from heat; let cool completely.
  • Pour mixture through a fine sieve into a measuring cup (to yield 1 cup); discard star anise. Cover syrup with plastic wrap, and chill.
  • In a large pitcher, combine grapefruit juice, Campari, and chilled syrup. Divide among eight glasses; top with sparkling wine or Champagne. Serve immediately.

  1. Fabulous drink recipe! We're huge fans of Grapefruit Absolute so this drink went over well with our family. We made it two different ways: one with sparking wine and one with sparkling water and grapefruit Abolute and they were both lovely! Garnished each drink with the star anise used in the syrup. Made for Spring PAC 2011.
