  • Melt butter and mix with non-fat sour cream.
  • Beat egg whites a little and mix with butter/sour cream mixture.
  • Smash bananas and mix in instant espresso, vanilla, milk and 1/2 cup granola, and mix with butter/sour cream/egg white mixture.
  • Sift flour and sugar, and mix in flax seed meal, soda and salt.
  • Mix dry and wet ingredients together.
  • Grease 12-muffin tin and divide batter equally.
  • Sprinkle each muffin with the remaining granola.
  • Bake at 350 degrees and until toothpick comes out clean.
