Grandpa's Ribs

"Recipe is from the Heart and Soul Cookbook, by the Junior League of Memphis. I have BBQ'd these ribs this way so many many times that I can't count them, and have had so much fun outside with my husband and kids while cooking them. It's a fun, family and friends party time with a delicious result. Note: Recipe says it is for grilling over coals. I only cooked these with a gas grill, over indirect heat, and used a spray water bottle for flare-ups. Also, I kept the barbecue sauce off at the end, and left it up to individuals to add it after ribs were cooked. And, cooking time varies with the size of the ribs and the heat. Cooking time for me was sometimes 3 hours, sometimes more. To check for doneness, pick up a rack of the ribs and if they start cracking at the bone, they are done."

  • Combine oil, vinegar, Worcestershire sauce, and lemon juice in a medium bowl.
  • Sprinkle garlic salt and cracked black pepper over ribs.
  • Place ribs, meaty side up, on cooking grill.
  • Grill, covered, directly over slow coals.
  • Grill for 1-1/2 hours or until tender, turning and brushing with basting sauce every 15 minutes. Vent holes should remain open during entire grilling time. Add coals as needed every 45 minutes to 1 hour to maintain grilling temperature.
  • Brush with desired barbecue sauce and grill 10 minutes more, turning and brushing with with barbecue sauce after 5 miutes.
  • To serve, slice between ribs.
  • Note: The coals should be 10 to 12 inches from the grill. If grill is too shallow to allow for this, arrange preheated coals in a circle or on sides, leaving a hole in the center. Test for medium-slow heat over the center. Place ribs in center of cooking grill. Grill, covered, for 5 to 6 hours or until tender, turning and basting every 15 minutes. Add coals as needed every 45 minutes to 1 hour to maintain grilling temperature. Ten minutes before serving, spread coals in a single layer. Brush ribs with barbecue sauce and grill directly over coals for 10 minutes more, turning and brushing with barbecue sauce after 5 minutes.
