ingredients
- 1⁄2 cup margarine
- 1 3⁄4 cups brown sugar
- 2 eggs
- 1 cup cooked pumpkin
- 1 cup white flour
- 1 cup brown flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon clove
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1 cup raisins
- 1⁄2 cup coconut
- 1 apple, chopped up
- 1 cup of chopped walnuts
directions
- preheat oven to 375°.
- Cream margarine and sugar in mixer. Add eggs, pumpkin, spices, salt, baking soda and baking powder.
- Mix in flours.
- With wooden spoon, mix in remaining ingredients.
- Drop teaspoonfuls onto greased cookie sheet.
- Bake for 12-15 minutes.

Thank you for a yummy, healthy cookie for those times I need something sweet! I did replace the brown sugar with 1 cup turbinado sugar and 3/4 cup natural applesauce. I also replaced all of the flour with whole white wheat flour and the margerine with organic butter. These cookies are very soft and moist. I will be making these again!
