Gingerbread Cookies

- 78.78 ml molasses
- 236.59 ml brown sugar
- 177.44 ml butter
- 78.78 ml honey
- 591.47 ml flour
- 4.92 ml cinnamon
- 4.92 ml ginger
- 2.46 ml black pepper
- 2.46 ml clove
- 2.46 ml nutmeg
- 2.46 ml cardamom
- 2.46 ml coriander
- 2 eggs, slightly beaten
- 532.32 ml flour
- 2.46 ml baking soda
- 7.39 ml baking powder
directions
- Combine molasses, brown sugar, butter and honey in a pot, heat until everything is melted together, but DO NOT SCORCH. If you do, the gingerbread won't hold together. Add the 2 1/2 cups flour and spices to the mixture. Let the mixture cool a bit. Add eggs, then let the mixture cool completely. Add the 2 1/4 cups flour (a little bit more if the dough is sticky when kneading), baking soda and baking powder. Knead until smooth and not sticky. Refrigerate overnight.
- Preheat the oven to 400 degrees F.
- Roll the dough out quite thin and cut out into cookies shapes. Bake until just golden and lightly brown underneath, about 3 to 5 minutes, depending on your oven. Let cool, then remove from pan.

Dear Evelyn, incredible until now there was not any photo on your recipe.<br/>I prepared the double quantity of dough (a huge amount) and this was the best decision. The dough was perfect, not sticky and very easy to shape. I cooked the cookies for 4 ½ minutes.<br/>I wish you all the BEST and a lot of angels to protect you!

Made & reviewed for ZWT 4 ~ Kumquat's Kookin' Kaboodles! I took these cookies out of the oven just 10 minutes ago... the smell in my kitchen is amazing! These cookies taste just as delightful as they smell too - I increase all the spices very slightly as I love spicy cookies & am thrilled with the result. I will be making these a lot - & I won't be waiting for Christams to do it! ;)

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
