ingredients
- 2 cups sifted flour
- 1 teaspoon baking powder
- 1 teaspoon powdered ginger
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 tablespoons brown sugar
- 1 tablespoon molasses
- 1 egg
- 1 cup milk
- 4 tablespoons melted shortening

Topping
- 1 stiffly beaten egg white
- 1⁄2 teaspoon powdered ginger
- 1 tablespoon sugar
- 1 tablespoon flour
directions
- Sift together flour, baking powder, ginger, soda, salt and sugar.
- Add molasses.
- Beat egg, add milk, and add to first mixture.
- Add melted shortening.
- Pour into greased muffin pans.
- Top with topping mixture and bake in hot oven (400) for 25 minutes.
