Gently-Flavored Egg Drop

- 3 cups chicken broth
- 4 eggs
- 1 celery
- 1 whole carrot
- 1 -2 garlic clove
directions
- Heat broth in 2-qt pan to boiling.
- Meanwhile, thoroughly rinse off carrot and celery. Remove leaves and white bottom of celery. Cut off top and bottom end of the carrot (approx. 1/2 in on each side). Chop both and add to broth. Use Garlic Press on garlic clove(s) and add to broth.
- In small mixing bowl, stir eggs long enough that yolk is partially mixed with whites.
- Once broth mixture is rapidly boiling (this is the key), slowly pour the egg mix into the broth while stirring. Stir an extra minute or two and then serve hot.
