Garlic Soup

- 2 tablespoons minced garlic
- 2 teaspoons coarse salt
- 5 cups chicken stock
- 2 peeled & diced potatoes
- 1 cup heavy cream
- 1⁄8 teaspoon white pepper
- 1⁄8 teaspoon turmeric
- 1⁄4 cup chopped chives
directions
- Mash garlic with salt to make a paste. Place in saucepan and add chicken stock & diced potatoes.
- Simmer for 20 minutes.
- Transfer mixture to a blender, mix & return to pot.
- Add cream, pepper & turmeric. Bring to a boil, stirring all the while.
- Set simmer 3 minutes.
- Garnish with chives.
- Note: The turmeric is important to the success of this dish.
