Garlic-Crusted Sourdough With Cheddar

- 3 cups water
- 2 medium garlic cloves, peeled
- 2 tablespoons butter, at room temperature
- 1⁄4 cup very finely grated parmesan cheese
- 8 slices sourdough bread (1/4-inch thick)
- 8 ounces cheddar cheese, coarsely grated
directions
- Bring the water to a boil in a saucepan; add the garlic; boil for 5 minutes, and drain.
- In a small bowl, mash the garlic with the back of a fork (or use a garlic press).
- Add the butter and Parmesan cheese, and mix well.
- Butter one side of each slice of bread with the garlic butter.
- Place 4 slices on your work surface, buttered side down.
- Sprinkle the cheddar cheese evenly over the 4 slices; top with the remaining 4 bread slices, buttered side up.
- Heat a large nonstick skillet over moderate heat for 2 minutes.
- Put the sandwiches in the skillet (do this in batches if needed), cover, and cook for 2-3 minutes, or until the undersides are golden brown and the cheese has begun to melt.
- Uncover and turn the sandwich with a spatula, pressing firmly to flatten them slightly.
- Cook for 1-2 minutes or until the undersides are golden brown.
- Turn the sandwiches again, press with the spatula, and cook for 30 seconds or until the cheese has melted completely; serve immediately.

When I saw that this recipe had three of my favorite things-- cheese, garlic, and sourdough bread-- I had to try it. Half an hour later, I was enjoying a wonderful sandwich with my spicy tomato soup (#28924) for lunch. I didn't have any whole garlic in the house, so I subbed some deli "garlic spread" for the garlic/butter and sprinkled the parmesean on. What a delicious combination- thanks for posting!
