- 2 cups brown sugar
- 3 cups flour
- 1⁄2 tablespoon baking soda
- 2 tablespoons cinnamon
- 2 tablespoons cloves
- 2 tablespoons allspice
- 2 tablespoons nutmeg
- 4 eggs
- 2 tablespoons lemon zest (I also added 1 tsp. lemon extract)
- 2 tablespoons vanilla extract
- 1 1⁄2 cups raisins
- 1 1⁄2 cups chopped nuts
- 1 1⁄2 cups dried fruit (I soaked my dried fruit in 1 cup brandy for a week)
- 1 1⁄2 cups melted butter
- 1⁄2 cup brandy
directions
- Preheat oven to 225 degrees. Grease and flour two loaf pans.
- In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts and butter. Mix thoroughly.
- Pour into pans.
- Bake for 1 hour. (I had to bake it for two hours.).
- Wrap cooked cake in foil. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.
