  • After carefully cleaning the frogs (both inside and out) and washing them in running water, place them in a bowl with a marinade composed of white wine, a dash of salt and pepper, some finely chopped parsley, about 1/2 a finely chopped onion and a trace of nutmeg.
  • Stir well and let them marinate for at least one hour.
  • Lift out the frogs from the marinade and dry them in a clean cloth.
  • Pass them in flour then in a beaten egg and fry in nicely hot virgin olive oil.
  • Serve hot with lemon.
