Recipe by Daniela Buia
Simple ingredients for a really unusual but VERY posh evening. That is, if you can find the frogs! (from my great grandmother's Italian cookbook dated 1924!)
Directions See How It's Made
- After carefully cleaning the frogs (both inside and out) and washing them in running water, place them in a bowl with a marinade composed of white wine, a dash of salt and pepper, some finely chopped parsley, about 1/2 a finely chopped onion and a trace of nutmeg.
- Stir well and let them marinate for at least one hour.
- Lift out the frogs from the marinade and dry them in a clean cloth.
- Pass them in flour then in a beaten egg and fry in nicely hot virgin olive oil.
- Serve hot with lemon.
