Fried Mashed Potatoes

- mashed potatoes (we use left over mash potatoes)
- 1 onion, diced
directions
- Add the onion to the mashed potatoes.
- Form into hamburger shape.
- Dip patties in flour on both sides.
- Fry in some hot grease until golden brown on each side.

This is a great recipe, but I added my own twist. Instead of potatoes, I used yams. After I mashed the yams, I added a little rice milk and sugar. After the flour step, I dipped the ball into beaten eggs and then I coated it with Italian seasoned breadcrumbs. Maybe about 10-20 seconds in very hot olive oil was all they needed. My husband, who isn't crazy about yams, loved this!
