These are pretty good. The holidays are coming and we always have leftover mash potatoes. These are fast to make--that is what I like--fast.

  1. Add the onion to the mashed potatoes.
  2. Form into hamburger shape.
  3. Dip patties in flour on both sides.
  4. Fry in some hot grease until golden brown on each side.

This is a great recipe, but I added my own twist. Instead of potatoes, I used yams. After I mashed the yams, I added a little rice milk and sugar. After the flour step, I dipped the ball into beaten eggs and then I coated it with Italian seasoned breadcrumbs. Maybe about 10-20 seconds in very hot olive oil was all they needed. My husband, who isn't crazy about yams, loved this!

Turned out very good. I even used instant potatoes. ;) Although the outside tasted a little too much like flour to me so I think next time I'll season the flour with maybe some garlic salt and pepper.

Good, quick....REAL COMFORT FOOD. The family love it
