Fresh Tomato Dressing

ingredients
- 1 small tomatoes, chopped
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon fresh ground black pepper
- 1 tablespoon fresh chives, snipped
- 1 teaspoon fresh oregano, chopped
directions
- In blender, puree tomato, olive oil, red wine vinegar, salt and pepper.
- Stir in fresh chives and fresh oregano after blending.
- Serve.

A lovely dressing, using herbs I had in the garden! I used a little more vinegar than olive oil, because I like it more tangy, and I only chopped the tomato small but next time will definitely blend. I would also maybe let it sit a little so the tomato juices blend well with the other flavours. Great on green veggies like lettuce, cucumber, avocado and asparagus. Yum thanks!
