Fresh Peach Cobbler Roll

"Yummy peach dessert! This recipe was published in a collection of Texas recipes in 1984, and is really good if you like a lot of crust in your cobbler. Serve warm with whipped cream or ice cream. Decadent!"

  • Melt butter in a 13 X 9 inch baking dish.
  • Heat sugar and water in medium saucepan until sugar is disolved.
  • Cut shortening into flour until mixture resembles cornmeal.
  • Add milk and stir with fork until dough leaves side of bowl.
  • Turn dough onto lightly floured surface or pastry cloth and knead only until smooth.
  • Roll dough out to form a large rectangle about 1/4 inch thick.
  • Sprinkle cinnamon over the peaches and spread the mixture evenly over the dough.
  • Roll dough up like a jelly roll.
  • Dampen the edge of the dough to seal.
  • Cut the roll into about 16 slices.
  • Place the slices on edge in the pan of melted butter.
  • Carefully pour sugar syrup around the rolls.
  • This will look like too much liquid, but the crust will absorb it.
  • Bake at 325 degrees for 35-40 minutes or until most of the juice has been absorbed.
