Spreads easily and works with almost any cake.
- 1 cup white sugar
- 1⁄4 teaspoon cream of tartar
- 1 egg white
- 1⁄2 teaspoon vanilla
- 1⁄2 cup boiling water
- Place all ingredients in a large bowl.
- Add boiling water last.
- Beat on high with electric beater for 10 minutes.
- Spread on cake.
- This makes enough icing for a large angel food cake or 2 or 3 cake layers.
This icing is delicious and this recipe is so much easier than the one I used to have.
