yummy healthy and super easy for weeknight dinners
- 12 whole wheat tortillas
- 1 lb chicken breast
- 1⁄4 cup cheese
- 3 tablespoons extra virgin olive oil
- 12 ounces pinto beans
- 6 tablespoons salsa
- cook chicken breast until no longer pink.
- shred with fork.
- stuff each tortilla with equal amount of chicken and cheese.
- place in heated and oiled skillet.
- fry until golden brown.
- mean while simmer beans.
