A tasty fennel dish and very light. Perfect company to main meat dishes.

  1. Wash fennel bulbs and trim off stalks and greens.
  2. Cut into slices lengthwise and set aside.
  3. Put oil into frying pan over moderate heat.
  4. Chop onion and garlic cloves and place into pan.
  5. Cook onion and garlic to a slightly brown colour, stirring occasionally.
  6. Add fennel slices and continue cooking for about 8-10 minutes.
  7. Grate tomatoes and add to pan.
  8. Simmer for about 10 minutes.
  9. Add wine and simmer for about 10 minutes.
  10. Add salt to taste and stir gently.
