English Muffin With Scrambled Egg and Ham

ingredients
- 1 English muffin, split
- 2 eggs
- 1 tablespoon milk
- 1 tablespoon butter
- 1 tablespoon mayonnaise
- 2 slices wafer thin ham
- 1 teaspoon chives or 1 teaspoon spring onion, chopped
directions
- Toast muffin halves lightly. In small pan, scramble eggs with milk and butter. Stir in mayonnaise.
- Spoon egg mixture onto muffin halves. Top with ham and grill/broil 2-3 minutes. Garnish with chives or onion.

This made a great breakfast. The English Muffins were my Sourdough English Muffins recipe #97694. I used egg substitute for the eggs and Canadian bacon for the ham. I think I would have preferred to put the Canadian bacon on the bottom, eggs on top and then melted some cheese on top while under the broiler. Thanks for sharing this quick breakfast treat.

After a huge lunch I made this as a light supper tonight and thoroughly enjoyed (though I forgot to put the spring onions on) but the addition of mayo (I used a whole egg mayo) certainly added a certain creaminess to the egg and the thinly sliced Adelphi ham on top gave it a flavour I thoroughly enjoyed. Thank you Ppaperdoll. Made for 123 Hit Wonders 2008.

I'm an American living in London since I got married in 1994 (except for a brief stint in New Jersey, and then Luxembourg). I work part-time for a national charity and also study social sciences part-time with the Open University. Keeps me busy, but I still find plenty of time to cook and search for 'zaar recipes!
Over time my cooking has meshed English and American customs together, especially at holiday time. My husband and two kids will happily eat Shepherd's Pie or Sloppy Joes, cheese and onion or grilled cheese sandwiches. The comparisons go on and on...
