"A fabulous carrot kugel - everyone who tries it loves it! You can easily make it ahead and reheat, or even freeze."

• Yields: 1 9" pie plate
• Serves: 8

ingredients

• 2 cups carrots, grated
• 1⁄3 cup oil
• 1⁄2 cup brown sugar
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1 tablespoon lemon juice
• 2 large eggs

directions

1. Preheat oven to 350°F.
2. Grease a 9" pie dish.
3. Beat eggs together in a large bowl.
4. Add all other ingredients and mix together.
5. Bake for approx 45 or until a knife comes out clean.
