ingredients
- 1⁄4 cup margarine
- 1 cup sugar
- 1⁄4 cup applesauce
- 5 tablespoons buttermilk
- 1 cup banana, mashed (about 3)
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄3 cup chocolate chips
directions
- cream margarine and sugar.
- add applesauce, buttermilk, mashed bananas and vanilla and mix well.
- combine flour, baking soda, and salt.
- add flour mixture to banana mixture and mix until combined (will be lumpy).
- stir in chocolate chips.
- spoon into greased loaf pan.
- bake at 350F for 60 minutes.

Excellent. I'm so happy with this recipe! I needed an egg free Banana Chocolate Chip recipe as I ran out of eggs. This stayed together even better than the recipes I use with eggs! This came out perfect! Delicious and moist. I used homemade applesauce. The only changes I made were using butter instead of margarine, substituting yogurt/sour cream for the buttermilk, using 1/2 c. whole wheat flour (the rest white) and adding 1/3 cup of walnuts. I used 4 mini loaf pans and shaved 10-15 minutes off the cooking time. Wonderful!
