    Ingredients:

    Directions:

      cream margarine and sugar.
    2. 2
      add applesauce, buttermilk, mashed bananas and vanilla and mix well.
    3. 3
      combine flour, baking soda, and salt.
    4. 4
      add flour mixture to banana mixture and mix until combined (will be lumpy).
    5. 5
      stir in chocolate chips.
    6. 6
      spoon into greased loaf pan.
    7. 7
      bake at 350F for 60 minutes.

      Excellent. I'm so happy with this recipe! I needed an egg free Banana Chocolate Chip recipe as I ran out of eggs. This stayed together even better than the recipes I use with eggs! This came out perfect! Delicious and moist. I used homemade applesauce. The only changes I made were using butter instead of margarine, substituting yogurt/sour cream for the buttermilk, using 1/2 c. whole wheat flour (the rest white) and adding 1/3 cup of walnuts. I used 4 mini loaf pans and shaved 10-15 minutes off the cooking time. Wonderful!
