Easy Crock Pot Beef Roast

"This is going to be one of the easiest Beef Roast you've ever made. This roast is so tender and delicious, yet so simple to make. The flavor of the pepper rings and juice goes right through the roast, and it is so moist, with a mild taste. I received this recipe from a close friend who works in the meat dept. at a local grocery store. When customers ask for a different way to make a roast, they suggest this. The leftovers make the best sandwiches. Be sure you use the Mild pepper rings, and not the Hot. I wouldn't advise adding potatoes or carrots to this recipe. This is one of my husbands favorite, I hope you like it too."

  • 3 -5 lbs beef chuck roast (or your favorite cut)
  • 1 (16 ounce) jar mild yellow pepper rings

  • Put Beef Roast into Crock Pot.
  • Pour the jar of mild pepper rings, including the juice over the roast.
  • Cook on low for several hours, until tender.

  1. So easy and So good. I made mashed potatoes on the side with steamed mixed vegetables. I personally don't like vinegar or the smell but the roast came out really good. I put a rub of mixed spices and placed the fat side up and scored the fat. Highly recommend this quick and easy recipe.
     
  2. Very tasty, added salt and pepper to meat before adding pepper rings, cooking time was about 4 hours for 2 lbs.
     
  3. This is fantastic. I almost couldn't stop eating it! I could really taste the peppers (which are one of my favorite things, so I really loved this idea and was happy when it came out as well as I'd hoped!) I used a 3.14lb chuck roast and cooked on low for 6 hours, adding no additional seasoning. Have a few cups of beef broth now too which will make some yummy soup. Thanks for posting! ~Feb 17, 2014. Update: Wanted to add that shredding the beef and putting on a sturdy bun with some barbecue sauce (and some of the peppers) makes an *awesome* sandwich! :)
     
  4. This was so very easy and tasted great!! I had made a horseradish dip/sauce to go along with it but I guess my horseradish was bad so we had to eat it plain. I was a little worried but it was very tender and tasted great!! I could very very faintly taste the pepper rings in the meat but maybe more because I knew they were there? We will definitely be using this recipe again!! Thanks for sharing!!

Hi Everyone! I am so happy that I found this site because I love trying new recipes, and this is the best place for doing just that. I was born and raised a city girl, but now reside in the country. I love the slower pace of life. I have been married for over 30 years to my wonderful husband and friend. We enjoy spending as much time as possible with our families and friends.
