  1. Heat oil in saucepan. Add onion, celery and garlic, till softened. Add broth, bring to boil.
  2. Add sweet potatoes, edamame, reduce to simmer, cook til tender. Stir in spinach till wilted. Salt and pepper to taste.

I love how healthy this recipe is, but it was pretty bland for us and I had to Dr. it up a bit. Maybe my sweet potato was too big, but I felt there needed to be something added to balance it's flavor. I added a pinch of dried thyme and a little balsamic vinegar. This will be nice to have on hand for a healthy snack or a light meal. Thanks for sharing the recipe.

Yes, this certainly is easy, and tasty too! I made this exactly as posted, except I also threw in some red kidney beans that I had leftover in the fridge. The edamame is a really nice touch, and this soup is guilt-free! One feels positively virtuous (and autumn-y) eating this! Made for Rookie Recipe Tag Game.
