That's right, Earl the cat vouches for this. No, he hasn't tasted it, he just said, "Yeah, sure, go ahead and post it" when I ran it by him. Well, that's not entirely true, he actually just looked at me and nodded. Ok, he slept right through my question, big deal! Feta, sour cream, cumin, scallions...
- 1 cup sour cream
- 1 plum tomato, diced
- 2 fresh serrano chilies, diced
- 1⁄4 cup scallion, chopped
- 1⁄2 cup feta cheese, crumbled
- 1 teaspoon cumin seed, toasted and crushed with mortar and pestle
- 1 pinch salt
- tortilla chips
- Combine all ingredients except tortilla chips and mix well. Chill until ready to serve.
Totally Buster-Approved! He was CHOWING on this dip when I busted him! LOL, he just hunkered down & kept on going instead of scramming - tasted it & I know why - this is mighty toothsome! Served w/thin tortilla chips & partnered with a fresh salsa (which Buster didn't deign to touch). Oh, this was so delicious! I have to admit, I got a bit lazy and didn't grind the cumin after toasting it...it was still yummy. Also, I used jalapeno instead of serrano (I'm a kind of a wimp). Thanks for the recipe, Earl (I mean...Sandi!). P.S. Sandi, your intro cracked me up. :)
