Dreamsicle Tofu Pie

Ingredients:

Servings: 8

• 10 ½ ounces lite silken soft tofu
• 12 ounces frozen concentrated orange juice
• 1 cup light vanilla soymilk
• 1 teaspoon vanilla extract
• ¼ cup Splenda granular , sugar substitute

Directions:

1. Place all ingredients in a blender or food processor and process till smooth. Pour into molds, cups or pie plate and freeze at least 4 hours. Cut or unmold and serve.

We liked this...pretty much reminded my of the "Creamsicles" from the ice cream truck of my childhood- which I guess is the point...neat texture...I poured it in a heart shaped mold {{cute}}, and used a couple of spoons of stevia in lieu of splenda... my husband hogged most of it and he is picky 'bout his sweet-ies, so a hit with him ...oh it stored in the freezer well (but like I said a piggy ate it quick - so it was not around long...) :)
