My family uses this as our everyday "butter". It's an all natural alternative to straight butter or chemical-laden margarine. Best of all, it spreads and melts like a dream! It's just a blend of real butter and olive oil. The mixer is the key, as the two can be tricky to blend. I use a KitchenAid stand mixer. I also use olive oil that's labeled "light tasting". If you use extra virgin olive oil, your spread will taste like olives.
- Combine both ingredients in a mixing bowl and blend on low until well combined.
- Increase mixing speed until a creamy texture is achieved (several minutes).
- Store in an airtight container in the refrigerator.
