- 1 cup chopped dates
- 1 cup raisins
- 1 cup chopped walnuts
- 2 teaspoons baking soda
- 1 1⁄2 cups boiling water
- 1⁄4 cup butter
- 1 1⁄4 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 1⁄2 cups flour, sifted
directions
- Combine dates, raisins and walnuts. Sprinkle baking soda over, then pour in boiling water. Let stand until cooled to room temperature.
- Preheat oven to 350°F Grease and flour 2 loaf pans.
- Cream butter and sugar with electric mixer (stand or handheld). Add eggs, one at a time, beating well after each addition. Add vanilla and softened fruit (with any remaining water). Fold in flour by hand.
- Divide batter between prepared loaf pans. Bake 45-60 minutes until toothpick inserted in center comes out clean. Cool in pans 10 minutes, then remove to a rack to cool completely.
