- 1 English cucumber
- 1⁄4 watermelon
- 1 pint fresh ontario strawberry
- 1⁄2 cup feta
- 1⁄2 cup mint
- 10 basil leaves
- 1 lime
- optional - 1/2 cup walnuts
directions
- Peel cucumber and remove watermelon flesh from rind.
- Cut watermelon and cucumber into bite sized cubes.
- Slice the strawberries.
- Chop the mint and basil (keep a few mint leaves for garnish).
- Cut the feta into 1/2" cubes with a sharp knife.
- Toss the cucumber, watermelon, strawberries, feta, mint, and basicl in a bowl.
- Squeeze lime juice on top.
- optional - toast walnuts and toss in just before serving.
- Garnish with a few whole mint leaves.
