This is from the George Foreman Great Grilling Recipe book. Being soy intolerant, I can never eat regular veggie burgers. These are a snap to throw together, especially if you have left over brown rice. I love the carrot, curry and walnut together...really delicious!
- 2 eggs
- 78.07 ml plain yogurt
- 9.85 ml Worcestershire sauce
- 9.85 ml curry powder
- 2.46 ml salt
- 1.23 ml ground red pepper (cayenne pepper)
- 314.66 ml cooked couscous or 314.66 ml brown rice
- 118.29 ml finely chopped walnuts
- 118.29 ml grated carrot
- 118.29 ml minced green onion
- 78.07 ml fine dry breadcrumb
- 4 whole grain buns
- Preheat grill 5 minutes.
- Combine eggs, yogurt, worcestershire sauce, curry, salt, red pepper in large bowl.
- Beat with an electric mixer until blended.
- Stir in couscous or rice, walnuts, carrot, green onions and breadcrumbs.
- Shape into 4 one inch thick patties.
- Place on grill and cook 7-8 minutes or until hot and cooked through.
- Serve on buns and garnish as desired.
This tasted great and was easy to make. We don't have an electric grill, so I just cooked them on a non stick skillet and that worked great. A unique taste indeed, and a great alternative to the same old vegi burger. I really like the taste of the yogurt with curry and walnuts. I also added a chopped up chili pepper 'cause we like things spicy. Thanks for posting this. It's a keeper.
This may be one of the stranger things I have cooked but it was very good. I used the brown rice, egg beaters and no cayenne. I cooked it on a George Forman grill. The texture of the patty was close to ground beef and had a great taste. I think it made about 5 or 6 patties but I did add more bread crumbs as it was a little wet. If you cook it until it ALMOST gets black it really gives it a good taste.
I gave this 5 stars. I had these in a diabetic cooking class and are they are so yummy. My copy of the recipe is slightly diffferent. The recipe calls for 1/2 cup cholesterol free egg substitute, 1/4 tsp salt, we used the brown rice, garnish burgers with honey mustard, thinly sliced cucumber or apple, alfalfa sprouts. The rest of the ingredients is the same. Cook time is slightly different the recipe says to spray grill with nonstick cooking spray and grill 5-6 minutes per side until done. We cooked our burgers in a frying pan at the class. Thanks for posting a great recipe. Christine (internetnut)
