  1. Very easy. I had leftover chicken and leftover rice, so it was a great way to clean out the fridge. Next time, instead of plain white rice I think I'll use something flavored.

  2. This is easy and yummy. I didn't have any chicken to put in so I used some chopped cooked broccoli and YUM! Perfect for something to fill you up after you FINALLY get those kids to bed ;P

  3. Delicious and easy! It is a great way to use leftover rice from takeout or other recipes. This is another great pantry staple recipe. Great to fix quickly. Thanks for sharing.

  4. Perfect just as it is! The kids loved it, and asked for seconds.. as did I! The only change I would make is to cube the chicken instead of shred it. This way little fingers can more easily pierce with a fork :)

I'm a twenty-something girl who loves eating, and making it as healthy as possible. But if you are looking to lose weight don't forget to excercise as well as eating well :) I love to bake, cook, and come up with quick and easy things. And since I'm a poor college kid, most of the ideas I have work well in low budgets. I'm also really big on traveling, and will try almost anything that sounds unusual. I'm a swing dancer and a runner and...did I mention that I love baking?
